Are you ready for your GO-TO ONE skillet dinner that everyone will LOVE? I got YOU! This Skillet Chicken & Orzo dinner is a MUST MAKE this week!

Let’s get going…

First things first, let’s brown off the chicken. Not only does this help keep the chicken moist while it cooks but it also helps make it so pretty! I love a pretty dish!

Once the chicken is browned, it is time to get the orzo and AMAZING sauce going that everything cooks in. One of the BEST parts of this dish is the rich sauce that everything cooks in. It is rich and creamy but SO EASY…. trust me this will become a go-to recipe for you.

The last piece is the arugual and/or spinach. I love this part as it adds another texture but also some much needed bite to counteract the rich sauce. Also I love anytime I can “sneak in” a veggie.

Dinner Time

Skillet Chicken & Orzo

A quick and easy skillet dinner that is perfect for a busy weeknight!

Cook Time 45 minutes
Total Time 1 hour

Ingredients
  

  • 3 Tbsp Olive Oil divided
  • 1 lb Boneless, Skinless Chicken Breast (or thighs)
  • 1 Tbsp All-Purpose Seasoning (or equal parts salt, pepper & garlic powder)
  • 1 small Onion, chopped
  • 2 Garlic Cloves, minced
  • 2 Cups Orzo
  • 2 Cups Half & Half
  • 3 Cups Chicken Stock (or broth)
  • 1-2 Cups Fresh Spinach or Arugula
  • 1 Cup Parmesan Cheese, grated
  • 2-3 Tbsp Fresh Parsley, chopped

Instructions
 

  • In a large skillet heat 1 Tbsp olive oil over mediim heat
  • Season chicken with seasoning on both sides
  • Add chicken into heated skillet and cook for 3-4 minutes per side, or until nicely browned, but not cooked through – remove to a plate
  • In the same skillet add in remaining olive oil & onion
  • Cook for 5 minutes, or until onions begin to soften
  • Stir in garlic and cook for another 1-2 minutes, stirring often
  • Add in orzo and toss until is all coated evenly, cooking for 2-3 minutes letting the orzo toast a bit
  • Pour in half & half & chicken stock and bring to a boil
  • Let cook for 5 minutes or until it has reducded by 1/3
  • Stir in spinach
  • Nestle chicken into the ckillet
  • Reduce heat to low and cover skillet
  • Cook for 20 minutes or until orzo is tencer and most of the liquid is absorbed
  • Remove chicken and stir in parmesan cheee
  • Serve chicken over orzo and garnish with chopped parsley
  • ENJOY!

Notes

You can use any cut if chicken you would like just adjust cooking time as needed
