Skillet Chicken & Orzo
A quick and easy skillet dinner that is perfect for a busy weeknight!

Ingredients

Tbsp
Olive Oil
divided
1
lb
Boneless, Skinless Chicken Breast
(or thighs)
1
Tbsp
All-Purpose Seasoning
(or equal parts salt, pepper & garlic powder)
1

Onion, chopped
2
Garlic Cloves, minced
2
Cups
Orzo
2
Cups
Half & Half
3
Cups
Chicken Stock
(or broth)
1-2
Cups
Fresh Spinach or Arugula
1
Cup
Parmesan Cheese, grated
2-3
Tbsp
Fresh Parsley, chopped
Instructions
In a large skillet heat 1 Tbsp olive oil over mediim heat
Season chicken with seasoning on both sides
Add chicken into heated skillet and cook for 3-4 minutes per side, or until nicely browned, but not cooked through - remove to a plate
In the same skillet add in remaining olive oil & onion
Cook for 5 minutes, or until onions begin to soften
Stir in garlic and cook for another 1-2 minutes, stirring often
Add in orzo and toss until is all coated evenly, cooking for 2-3 minutes letting the orzo toast a bit
Pour in half & half & chicken stock and bring to a boil
Let cook for 5 minutes or until it has reducded by 1/3
Stir in spinach
Nestle chicken into the ckillet
Reduce heat to low and cover skillet
Cook for 20 minutes or until orzo is tencer and most of the liquid is absorbed
Remove chicken and stir in parmesan cheee
Serve chicken over orzo and garnish with chopped parsley

Notes
You can use any cut if chicken you would like just adjust cooking time as needed
