Meemaw's Sugar Cookies

My childhood favorite cookie, MeeMaw's Sugar Cookies. They are crisp, just sweet enough and perfect for any holiday or afternnon treat.

Ingredients

  • 1 Cup Butter room temperature
  • 2 Eggs
  • 1 Cup Sugar
  • 1 Cup Vegetable Oil
  • 4 ½ Cups All-Purpose Flour
  • 1 Cup Powder Sugar
  • 1 Tbsp Vanilla Bean Paste (or extract)
  • 1 tsp Cream of Tarter
  • 1 tsp Baking Soda
  • 1 tsp Salt

To Bake

  • 1 Cup Course Sugar
  • Sprinkles

Instructions

Cookie Dough

  • In the bowl of stand mixer cream together butter and eggs until light and fluffy
  • Add in sugar and mix until just combined, scraping down the sides of the bowl as needed
  • Add in oil and flour mixing until just mixed
  • Add in powder sugar, vanilla bean paste, cream of tarter, baking soda and salt, mixing until dough just comes together, making sure to scrape the sides and bottom of the bowl
  • Cover bowl and chill in the refrigerator for atleast 1 hour, up to 6 hours

To Bake the Cookies

  • Preheat oven to 350
  • Line cookie sheets with parchment paper
  • Using a small cookie scoop (2 tsp size) place balls of dough onto prepared pans
  • Using a flat bottom glass press the cookies flat to about 1/4" thick
  • Sprinkle sugar & any sprinkles you want onto flattened cookies
  • Bake for 12-13 minutes, or until edges begin to brown and cookies are set
  • Remove and let cool on pan for 5 minutes and then move to a cooling rack to cool completely
